SPANISH-STYLE HOT CHOCOLATE
(PER SERVING)

1 cup milk (I use 2%)
1 1/2 Tbsp unsweetened cocoa powder (GOOD quality PLEASE!)
1 Tbsp sugar (I like mi chocolate slightly bitter... if you prefer it sweeter, adjust sugar accordingly)
1 tsp cornstarch
Sprinkle of ground cinnamon

Mix all ingredients in a heavy saucepan (size will depend on how many portions you are making). Cook at medium-high heat, whisking constantly, until it boils and thickens. It's important to whisk constantly or you'll end up with a lumpy, disgusting stuff.
